She is an advocate for whole grains milled at home, because store bought grains have long oxidized after about 3 days from when milled.  This means nutrients are lost.  Also, store bought grain is void of the bran and germ.  She likens grocery store flour to a piece of paper.  A piece of paper is not a tree; flour is not wheat.  She has done research showing sicknesses developed in the late 1800s - early 1900s when commercial industry started milling grains and separating the bran and germ and bleached the rest.
